Hi there
I use the Lanskey system for sharpening (yes I know it's a bit fiddly) and then a blade tech for day to day honing.
They are as cheap as chips and nice and small for the pocket.
I think a lot of sharpening problems are down to the knife steel however.
In the days of good old carbon steel they were much easier to sharpen but you had to hone them more often and keep them oiled to avoid rusting.
Stainless keeps an edge better but are not as easy to sharpen-you pays your money etc'
What knife to people on here use.

All the best

I use a lansky diamond steel, does the job perfectly in seconds, just give it a quick run over after use and your blade stays razor sharp.

Just bought the 1000/6000 waterstone, had a play with an old knifea dn got a nice edge on it but think guides are probably a good idea before I try it on an expensive blade.

A great way to sharpen a knife is to use another knife, basically running the edge along another so you are sort of cutting the edge of one knife with the other. It takes a bit of getting used to but once you do the results are amazing.

Another thing that i like to use when I'm polishing the edge of my knives is this stuff: Buy Flexcut (Gold) Polishing Compound from Axminster, fast delivery for the UK

Rub it into the rough side of your leather belt and then strop the edge over it. This'll bring it to a high mirror polish and scare the shiite out of you when the hairs are falling off your arm:D
Providing you've done the stone work properly that is!

I've used this. It is really very good. It does help get a great cutting edge.

i told sakowsm about lansky sharpener, ive got one,had it for years, its puts razor edge that you could shave with, unfortunetley my fine diamond stone is worn out and have not got a replacement stone yet.

I use Autosol cal polich paste to do exactly the same, like you say, scary sharp!
