Gralloching & Butchery Courses

Good morning all,

I'm from the Derbyshire area and i'm enquiring whether there is any good gralloching & butchery courses to go on in this area?

I don't mind travelling if there is a recommended course elsewhere.

For a really good gralloching and larder work training day, contact @flyingfisherman on here.
Myself and @Mouse spent a day with him a few years ago, processed nine deer of three different species using a variety of different methods, and came away with a whole lot more confidence.

For butchery, I found the one day course organised by BASC to be very good.

I just realised who @flyingfisherman is and I have already chatted with him and he gave me some really good advice. He hasn't any cull days organised yet and he put me onto John Senior.

Does anyone know or have experience with John and does anyone have contact details for him?

Not come across any butchery courses around here but depends on what you're after - just a simple "break it down into the basics" or more advanced butchery? If it's the former and you want to bring a carcass up to NE Derbyshire then I can help you (reg food business, chiller etc) if it's the latter then might be worth approaching local farm shops and asking if you could spend an hour with them at a quiet time - ideally on a deer carcass but a lamb is near enough.

As an alternative to a course Donnington Deer Management do two excellent instructional dvds one on Gralloching and Carcass Inspection. The other one on Butchering. I have the Gralloching one and it is excellent, I also intend to get the Butchery one in due course.
