I just finished a few steak knives for a rather fancy place up north and the handles fitted were of stabilised Bog Oak.
The timber preserved for thousands of years in anaerobic conditions within the silt which formed the floor of the fenland basin after it flooded over 7000 years ago.
These are not the knives but this is the stuff.

I have four goodly sized chinks sat on my bench, not big enough for knifer handles but they might be of use to someone?
