In extremis, this would do the job - plenty of history, and our ancestors did more than Roe with it...

Almost anything as long as it's sharp. Nothing worse than a blunt knife. I used an apple paring knife for years on roe, tend to use something a bit bigger on fallow, but as long as it's sharp it'll do.

My daughters kitchen knives get sharpened when they moan as they can't carve Sunday dinner šŸ™ƒ.
Buys a set ,blunts them and replace, I must stop showing the son in law how to sharpen knives.
He says he doesn't understand when I explain, maybe my fluent Ashby brogue is a different language to Derby šŸ¤”šŸ¤£šŸ¤£
 
Yeah my one arrived this week too
I love this little knife. It’s much smaller than my others but just feels so good in the hand. I actually used it to butcher a complete roe buck and sharpened it afterwards. It took a little more technique over the steel because it was short but I really enjoyed using it. I usually use a proper boning knife but started with it to see how sharp it was and never put it down.

I would avoid the micarta stonewashed blade version, I bought one and the steel doesn’t seem as good.
 
It is a very sharp V-Knox around 15 quid. Used by those in the trade for a reason, you won't find ANY of these well advertised c rap knives in the Butchers supply company's
They are good, cheap and they sharpen easily to a razor sharp edge, they are essentially disposable.

Down side is they are not designed for use in the field, so they don’t come with a sheath, they don’t hold their edge particularly well which is why butchers and abattoir workers are constantly on a steel with them and can bend or snap quite easily.

Your lack of understanding of apostrophes makes my head hurt.
 
I used Mora for ages and liked them just fine but then went with a victorionox boner 5ā€ and much prefer it with a Kydex sheath - both cheap as chips.

Used both on red and roe no bother at all
Where did you get a sheath for the boning knife? Or was it made?
