What if there's a carcass issue

I think the query was more aimed at the final consumer than any producers in the chain. The very final validation that any food is fit for consumption rests with the end user, all prior checks and balances are designed to ensure it's fit for consumption when it reaches the end stage

If you are selling as long as you keep the records required by law you will be ok.
I would also add if your record keeping is top notch and you get some sort of inspection it will look much better if it's all organised and neat and tidy and not just written on the back of a fag paper.

I have to keep a carcass register as part of holding a VDL (Scotland only), in which the species, sex, approximate weights, location shot, stalker details, and my own observations are logged. I also have a register of invoices, HACCP, Temperature logs for all chillers, and cleaning schedules.
 
Take example of highland game few years back ....food poisoning from meatballs caused a huge ripple back thru the chain / industry and how they processed....
And it was all caused by the "final user" not cooking a minced product to correct internal temp & time.....
When does the end user take some of the responsibity ?
On recommendation of EHO inspector I've got a couple user I structures on my labelling such as Do not refreeze adder defrost
Keep refrigerated
Coom to correct Internal temp

That's the sort of thing I'm on about if anything happens and they come looking you will be seen as doing everything in you power correctly and seen as a very low risk.
