I speak as one who, as a yoof, devised all sorts of ill-advised trailers to tow behind his 50cc bike (as was common in the country where I grew up).
Why don't you humour/slay the doubters by conducting a dry run, with say a sack of sand to substitute for a deer. See how that rig performs, especially with respect to controllability, and the inevitable compromise you'll have to make on speed (slow enough so the tail doesn't start to wag the dog, but still fast enough to make progress and not be unstable on the bike).
As long as your not going too fast and you take your time there's no reason it should fail......I've dragged deer in the same mat and I've never had an issue..........the Idea with the bike is to take the strain off me......if there is an issue with the terrain that the mat is on I'm sure it can be resolved if a little common sense used.You can’t tease us like that- pictures please
Seriously though, ok you towed a 100kg lump on presumably level ground that consciously wanted to stay on the mat. So next stage is an inert lump with no consciousness on uneven ground. How is the handling then?

Is it going to be as easy to ride and as stable as a quad and a trailer? No.
Will it work with a little planning and care? Yes, 100%.
OP wants something to make moving heavy dead deer easier and doesn't have a lot of space for storage and transport so a bike makes perfect sense. It'll be more fun and manoeuvrable on the way to shoot deer and if he blanks then plenty of fun to ride back too.
I'm not quite sure why so many people want to make stalking as efficient, safe and boring as possible. For some of us going stalking is about the feeling of adventure going on a hunt and getting some meat. Why not have fun while doing it.

For their individual situation the solution is this bike and I'm sure it will work well for them. Using a bike and trailer works for me but I'm well aware it won't work for everyone.
