New butchery / man cave

As mentioned in other threads, I have been planning a new butchery /beer store since I sold off a portion of my garden which contained my current skinning rail and larder.
It’s not fully kitted out yet, but the power and lighting is in, vinyl flooring is in and I have braced the internal frame ready for a key clamp rail to be fitted.
Once that is done then I can move the larder, fridges/freezers and all of my brewing guff in, plus I will include a butcher’s table.

Soooooo, the power is connected, the fridges and freezers are in, racking is in and so is the beer!
Only a butcher’s table and new mincer to buy and the skinning rail now left to fit and I’m ready to go

Are you putting cladding in front of the cutting area? I am registered as a food business and just setting up a similar building.

No, I will have the skinning rail set so that I can both skin and break down into primals whilst hanging and the resulting joints go straight into one of the ‘clean’ fridges.
The gram fridge is only for hanging deer in their jackets.
Once it has matured in the fridge for a few days (to drop the moisture content a bit) then it I take it into the house and do the fine butchery and vac packing.

Have you sealed the floor well? The floor tends to be the thing that lets you down. Other than that, nice shed! :thumb:
Ah, worked it out. It’s the roof brace in the first pic that isn’t level. But, Mr Gryphon clearly hasn’t spotted that in the most recent pics the tie in question is actually resting next to the first fridge (first pic in latest batch) as I have removed it as part of my strengthening the roof.
Powers of observation have clearly deserted him!!
