Fancy something quick for your tea?
SERVES 4
1-2lb roe sliced to around 1/2" wide strips
2 peppers (yellow and red for colour) diced to about 3/4"
2 red onions diced to same as peppers
2 chillis finely chopped
2 (or more) cloves garlic finely chopped
1 tsp Cumin
1 tsp chilli powder
2 tbsp olive oil
salt
pepper
Handfull of fresh coriander
Tortilla wraps
Fry onions and peppers in a large frying pan ( I use a wok) with 1tbspn olive oil until the onion goes clear. Remove them from the pan into a bowl for use in a wee while
Fry the roe, cumin, garlic and chilli in the rest of the oil until the roe has sealed, add the onions and peppers and keep on high heat for about a minute or so, shaking regularly, season and add coriander serve immediately on a warm tortilla with a spoon-full of creme-fresh
If you want you could make a tomato and onion salsa to serve beside it
Don't feed leftovers to the dog, bugger will be farting all night
