1.2 kg goose & tomato & onion sausage.
1 kg goose chilli & garlic & onion sausage.
1.2 kg goose & cheese & onion sausage.
also 2 patties for tea from the bottom of the sausage stuffer.

Look amazing. At the Game Fair, I always do my annual pilgrimage to the pheasant goujon stall, the one where they sell paper cones filled with goujons.
I use the tenderloins,when that little membrane,
next post today will be some pheasant Kiev's and Kiev balls.never done them before so wish me luck😆

velvet Canada goose strips in pitta bread stir fried with onion, celery,and chestnut mushrooms in sweet chilli sauce.

cheap cuts or potential tuff meat covered in baking powder for around an hour,then washed and stir fried.comes out just like from a takeaway.thats how they prep their meat.

A very small 1kg test batch of slightly cured wild boar 🐗 sausages. Half are Due for a hot smoking shortly and then to be eaten cold , the other 5 or so will just get cooked in the wood fired oven and be eaten with mash . If seasonings are how I like then I will do a big batch later this week or next. Once I’ve got some more meat ready.
