I need to achieve cull numbers. So into my freezers they go or to the dealer. Friends and family will have a good share, a couple of artisan food producers take some, and the dog quite likes trim, hocks, bones . . . . .
 
The chain is only as strong as the weakest link - I have had cause to reject SQWV carcasses in the past, bought off FCS, so to me the assurance scheme is of no value. The rank is but the stamp, the man is the gowd...

May I ask the reason for your rejection?

Just curious, I know your standards are high so would like to learn why, happy to speak on PM's.

Faecal contamination: the pellets were in between the shoulder blade and the ribcage; interestingly, when I took the matter up with the WRM and SWRM, neither could explain as to how they might have arrived there, I had to explain that to them. This in turn told me much about both the worth of SQWV and the overseers in the 'organisation' concerned with the supply.

Sad that something so basic was missed.

In the places that I worked in with the SQWV we did a lot of work to ensure the carcasses were stored and presented well for the game dealer.

Was under the impression that the commission were the standard that everyone else was measured to... :-|
 
Wholesale markets never give good prices - whether its lamb, bedf, wheat, venison or other commodities. The added value is where the money is. And forget UK supermarkets, keep it local.

one big positive from the pandemic is the rise of local home delivery for all things. If you haven’t the time, resources or inclination to process yourself, find somebody local who does and looking for more carcasses.

And if the big boys whinge, well so what - its called competition.
 
One of the most profitable things that has happened to me during my short stalking career has been to shoot 3 fallow in quick succession at last light. By the time I'd gralloched them and got them off the field it was late in the evening and the local game dealer - who would normally have taken them - had packed up for the day. So I had no choice but to take the carcasses home and get on the blower to find my own customers. It was surprisingly easy, and I haven't sold a carcass to a game dealer since. On the contrary, I could do with some extra carcasses to keep up with the demand.

I wouldn’t expect any repeat business if I’d butchered them up myself and sold them on either.Maybe they had a market as charcuterie, but I just don’t have the time, skills or licence for that.
The most enjoyable stag stalking is during the rut, the meat is at its best July to early September, so the most sought after stalking is when the meat is at its worst.
I don’t think that’s something we can change.
