Spoke to a contractor a couple years back. He said they’d usually shoot around 20 red deer a night, recover around 12. The left were unaccounted for. He left because he couldn’t sleep at night knowing how many were left injured. Says something..
Sadly, my VERY local market stall option has closed due to not being "profitable" and I'm loathed currently to go too much further afield. When I initially ran that stall, I used big cool boxes but quickly bought a large SOLIX battery (petrol generators not allowed) and thence forward, took a small upright chest freezer (Beko) and a cold display bought off an auction site (RAMCO thanks to a member on here ) for a very good price. The SOLIX could run the freezer, chilled display, a deer infinity mirror and some stall lighting comfortably for 6+ hours. I have seen numerous pictures of stalls not using any chilled displays, but I didn't want to do that.
Foxes aren’t as tough as a deer when hit with a centre fire, recent thread on here about how tough a roe deer can be. Finding a heart lung shot deer in daylight can be hard enough without a dog never mind doing it at night. Unless your intimate with your ground backstops could also be an issue. The issue isn’t just wounding its the recovery.
Estates are learning that selling to the end user brings in a lot more profit and less waste , selling oven ready cuts to the end user via mail order etc
I admittedly don't sell much anymore, mainly because its worth nothing.
I now do sausages and burgers. Last time I processed 3 roe and ended up with LOTS of sausages and burgers. People with pay for them but there's no harm giving it away to friends and family. Mrs also eats it so whats not to love
