Quick one this has popped up and at a manageable price!. Would this be suitable to hang fallow carcass?.

Yes if you use @Tim.243 hangers



A hind and it's young in mine. It has same dimension height wise as your chiller

We use one of these. Absolutely fine for munty and roe on standard gambrels. May need one of Tim's hangers for fallow, although we manage OK with smaller fallow. That is a good hanging rail, but we just put all the top rack supports across, and then cut an aluminium ladder to length and laid it across the top, and hang from that with S hooks. 4 munty or roe will comfortably fit in at once. 2 - 3 fallow depending on size.

I was in Nisbett's Catering Centre in Avonmouth Bristol last Friday and they have a clearance section. It were a number of double door chiller, manly unused, some with minor dents, etc. This was an example:
