Weshenfelder tomato sausages.

Hello.

Has anyone ever used the weshenfelder tomato sausage mix? Read a few comments on the site with mixed review that they don't have enough tomato flavour in. Thinking maybe adding tomato puree.

Made the royal ven mix of theirs last night and it was very good.

Big fan of their stuff. Not tried the tomato, but Royal Venison and Venison and Game are very similar (and very good indeed), but my absolute favourite is the Moroccan Burger mix. Works well in burgers and sausages and is a staple brekkie on our shoot where I recycle any canadas from the previous week into sausage rolls. Way better than baking them with a brick.
 
You can buy tomato powder (which is presumably made by drying all the skins from the peeled plum tomatoes that go into canning).
It has a very intense yet rounded flavour, and is much better than puree for adding to sausages and burgers.

Not tried the tomato one but adding purée would be a good option, and maybe some finely chopped sun-dried tomatoes too for extra tomatoness!

Re the royal venison mix, I personally find it too salty, so I mix it with an increased amount of meat and a load of chopped fresh herbs to get the flavour right.

A Moroccan spice blend plus a bit of tomato powder plus a bit of salt plus whatever carrier you're using (rusk or whatever) will give you a good mix.

(Trial and error will teach you the right proportions. I'm not going to give away all my trade secrets!)

We used to mix up the Royal Venison mix that they do with Worcestershire sauce and added tomato purée and cumin…… absolutely bang on!
 
Bit late to the party but I do a few pigs at home and use the tomato seasoning from weshenfelder, like alot of people say I don't think they have enough so add a tube of puree and a can of chopped tomatoes to a 10kg batch
 
I know its a bit late.
Add a decent amount of sundried tomato, it adds a very rich tomato flavor.
