An SD register of open larders?

I only seem to end up with a glut of carcasses when I'm hundreds of miles away from home. I was wondering if there would be any interest in an SD list of larders that folks are willing to share?
I would be happy to add my own approved and chilled larder on the Staffordshire-Shropshire border and I'd be happy to liaise with the local game dealer to arrange collection, I would only ask for a contribution to running costs if it wasn't already switched on.
Access to a larder in the Inverness area would be a benefit to me.
 
Speaking as someone who is currently establishing a game/venison business, I am presently reluctant to openly share and invite local stalkers to use my larder facility. The idea of 20 stalkers turning up on a Saturday afternoon with 30 carcasses and the associated mess/crap etc, isn’t great! I hope to get to the stage where I can open the doors a little more and to encourage more Perthshire Stalkers through the door, however at the moment it is a case of managing the small number of stalkers and local estates who currently supply Perthshire Game.

wouldn’t have thought it would be a good idea, opens yourself and chiller to all the bits you work to avoid, the main one for me would be carcase quality and the unknown stalker, defo not a good idea as your the one it all comes back to, for me a definite no, it’s always good to help someone out, but when you check the carcase before it goes in the chiller and you reject it - not a good picture

i don’t do negative at all but it’s not a good idea to be honest, your call your chiller and paperwork
 
I’ve offered this locally to a few people, but it is on my terms- decent quality carcasses (no gut content) and has to tie in to my life plans, I.e. when I am here and available to check a carcass and open up.

You’d need to consider a few based on if your chiller is not ‘on’ and has to be turned on for an individual plus your time etc. Don’t forget at this point it’s your problem if the chiller breaks down and spoils the carcasses…..

Yup, if that happened you'd have a row of people lining up to complain, but no one would be insistent on chipping in for the chiller electricity and service costs either...

Having managed larders for a few years, the best setup is just having one person working out of it.

No one else can be held responsible for it's condition. The deer carcasses don't spring to life and do a reverse of the Sorcerer's Apprentice cleaning scene when the chiller lights are off.

Having 'outsiders' come in to dump their rubbish process and hang carcasses is more work, even if they are perfectly capable, clean and courteous. But most are not!
 
Great idea in principle but a nightmare in practice. Folk wanting to turn up at all hours with carcasses of unknown quality. I've seen some of the stuff hanging in the big game dealer larders and I wouldn't have it in mine!

I've let a few folk use mine locally, but they are people I know.

The other sticking points are, if the collecting GD is not happy taking one or more of a the deer so rejects them (which can happen) who will deal with that. Also with power cuts the High Lands had last year in the extreme weather, I ran my mobile welder for 2 days with deer in the chiller so cut them up and jammed them in a freezer.
 
Good idea but unfortunately a nightmare for all the reasons above plus some more.
What about areas ehere people use different dealers for collections for example there are three different ones all collecting in my area
Would really need to all use the same dealer or could be a nightmare.
How are you going to charge for the use we had a meter put on ours it was costing £15 to run for a 24 hour period a big chill unit certainly but that was twenty years ago shudder to think of running costs today
Personally I would need to know someone very well before giving them access to a larder of mine.

I operate a food business that did have shared storage and prepping areas on a small scale. One Monday morning visit from EHO convinced me that no amount of money would cover the issues again and closed it remains. Particular issues for me were theft / shrinkage and cleanliness / waste disposal. Of less consequence but still relevant is the tendency for clients / customers to abandon collection leaving you with disposal.

Not a snowballs chance in hell, it's a major security risk, as well as food saftey.
100%, on the basis that the larder is at our house - it isn’t great.

I’ve already refused stalkers for the poor standard of carcass prep that has been carried out (despite educating the stalker and giving them the chance to improve their procedures).

It’s a total minefield when you allow others into your chill!
 
A while back I was out stalking with a guy on fallow, he shot a deer off we went back to his communal larder / chiller to finish off

no drip tray in the chiller, blood over the floor, knives on the side covered in blood, I asked the guy where the stalker was that brought the fallow in that’s hanging in blood in the chiller, thinking he just popped down the shop and on his way back. Oh no. His reply oh that was the bloke from yesterday, must have been in a hurry
2 hours it took to clean and sanitise the whole place from top to bottom, it was spotless when we left,

if I ever need a jolt or reminder that always jumps to the front for me

100% there are too many who will abuse your trust!
 
This starts as a great idea, incredibly useful. BUT sadly always ends badly. Why do people hang a deer in the larder that looks like it had an accident with a grass cutter. It's got that much green on it the cows are thinking they can eat it. Also how difficult is it to clean everything down and pack it away (just as you found it) I find it amazing people are able to offer the use of the chiller yet get let down so badly by those that use them
 
Happened to me a chap dragged a deer down my front path round the back blood trail all the way round. Hung with neck closed and a poodle of blood at the neck. **** bag and arse still in. When challanged he said he thought it would be ok and the **** bag and Arse he always struggled with could i do it. Spoiled for the rest.
