I know your upcoming lead ban makes this one problematic, but after a very long journey I found my ideal cat-fox-dog rifle out to 300m in a 6mmBR with a 1:12 twist. 55gr v-maxes faster than the 55 v-max in a 22-250 (with a better BC too for those that obsess over such things) and 75gr v-maxes when I imagine I might need a couple of hundred extra foot pounds at the business end. Trajectory and drift is pretty much the same. It is very hard to put together a 6mmBR that doesn't shoot well, and with no recoil and less noise than either the 22-250 or .243, it is very hard not to shoot a 6mmBR well.
.243 to .223, purely for fox 🤔

Heard a lot of similar stories fella and don't doubt you. i can only tell you of personal experiences with myself and others around me. we do predominantly shoot over larger open areas, quite windy and at slightly longer than average distances though which i imagine makes a little bit of difference overall. Not knocking the caliber in the slightest but the OP original description states very similar conditions as to what we shoot over so thought this may be a little bit of useful info for him.
As my original reply, back up the thread, I shoot in similar conditions, including west Wales plus arable farms in Wiltshire where ranges can be 280/300 yards, one farm on top a hill that is always windy!
The only real impact of longer ranges / windy conditions is the bullet doesn’t go where you meant it to, but you are saying you get 100 metre runners with good placement.
The only thing that could be causing runners would be poor expansion from the v-max, are you getting decent speeds?

Forgot about this thread.... I went for a 22-250, Sako 90 Finnlight in the end and put a spare Alpex 4k on it.. christened it well... I like it! More speed = more fun! 
So that'll do the fox work if and when the old lead ban comes in... thermal is still atop the 243 for now mind, and will do the bulk of the winter work so I can get all these troublesome lead bullets shot

20 " 1:14 twist purely because I have no interest in shooting heavier than 50/55 grain varmint style bullets in it. Short barrel as i shoot a lot from truck and mule.

Been using the 243 sako85 blackwolf for foxes recently as I've got some ammo to use up. Am very impressed with the performance. 75vmax hits hard.

If my memory is correct , around 130-140 m with 50 grn vmax @3700 fps
