Whole deer carcass butchery course will include:
Understanding native breeds.
Hanging carcass
Learn how to skin and joint and the primal cuts.
Butchery techniques and knife skills.
Seam butcher haunch and saddle.
Curing and smoking- the basics
Burgers and other meal ideas.
Each student will have 1/2 a deer to practice on and be able to take some meat home with them.
