£1.80/kg for Red minus deductions
£2.50/kg for Roe minis deductions

Personally, my advices, stop worrying about the price and just shoot the bloody things!

If everybody did that, they wouldn’t be a dear problem.
Fair comment haha! It’s my first time selling so just want a rough gauge.
 
Butchers always want out of skin, which as above you’d need to register as a food business with your local council, but registered to sell out of skin. This will require good facilities with separate processing sections etc and a haccp in place.

Price wise, start at whatever you get/want per kg skin on, increase to cover the time it takes to skin, proper disposal of skin and likely delivery cost and time to deliver.

None of the above is impossible just takes a little time and space.

Not true at all. I've had 2 separate premises approved with nothing more than a chiller in a shed / barn and a domestic kitchen. HACCP is required but there are various templates knocking around on here that members have kindly shared.

Are you skinning in your kitchen where you also process your skinned animal, i.e. one room?
