Current carcass prices per kg?

You’ve thrown me here. I may be being silly but wasn’t the whole debate whether or not a food business is required and no was established but now you’re saying yes to in-skin carcass? So what can be sold without food business registration? For clarity I’m looking at selling direct to butchers.

If you're selling in-skin carcasses to a game dealer (AGHE) you need Food Business registration.

If you're selling in-skin carcasses direct to the final consumer or to a local retailer who supplies the final consumer then (according to the updated guidance, as brought to our attention by @25 Sharps) you do not need Food Business registration.

A local retailer could be a butcher, but most butchers would require the carcass to have been skinned (because the average butcher's shop does not have a designated separate area for handling carcasses in-skin). In order to supply skinned carcasses you would need Food Business registration.

Is that clearer now?

I doubt it's a Brexit victory. The "hunters exemption" was an EU thing that we adopted.

If you are not a food business you can sell in the skin to a local butcher who sells direct to the final consumer, you cannot sell out of the skin.

You cannot sell in the skin to a game dealer if you are not a registered food business as the game dealer does not sell directly to the final consumer so the exemption does not apply.

Last I checked the dealer tags we were getting £1.50/kg for roe and £1.40/kg for red / fallow - North East Scotland

So Fallow £1.40 per kg to an AGHE? What is the consensus on a reasonable price to pay a stalker as a consumer? Chatting to a friend of mine earlier who pays £2.40 for fallow in skin to a friend of a friend and he asked me if this was fair as I shoot a bit. Explained/apologised for my ignorance as I am a noob just making a start with stalking but said I knew the place to find out

Look to private customers, build a relationship, I did 30 odd deer last year, not 1 went to a game dealer.

No, it's not, but it's probably more than most recreational stalkers shoot in a year, and it's a tidy number to shift through private sales. Well done to @Mike L, I say.

Absolutely, it’s a lot of work and effort as well in addition to the actual stalking.

I don’t process any Dan, just straight to customers. I was merely making the point it’s possible to get an outlet outside of game dealers.
